There are no books that focus completely on Anne's time on the Continent but Eric Ives has a good chapter entitled "A European Education" in his book, "The Life and Death of Anne Boleyn". There are also two article which may be of interest to you:-
"The Youth of Anne Boleyn" by Hugh Paget - see http://onlinelibrary.wiley.com/doi/10.1111/j.1468-2281.1981.tb01225.x/abstract
"Anne Boleyn's Childhood and Adolescence" by Retha Warnicke, see http://www.jstor.org/pss/2639329
